I am absolutely mad about kale at the moment. After stumbling upon this recipe for kale salad, I’ve been making variations of it every day for the last five days (I’ll have to share some of my faves later). Today, I thought I had better try something different before this mild habit turns into another addiction, so I threw some kale into a soba noodle soup which I made with fresh salmon (skin on!), tofu, enoki mushrooms and organic soba noodles – and a generous sprinkle of nanami togarashi on top… a quick and healthy lunch to get me through hump day.
